In the mixer, process, for 10 minutes, the flour, the extra virgin olive oil and a pinch of salt. Then, pour in the orange juice and keep on processing the dough, until it gets firm. Roll out the dough in a sheet and cut small discs. Fill the dough discs with the anthotyro. Fry the skaltsounia, put them in a plate and powder them with icing sugar and cinnamon.
